~ Smoked Trout Marinade...the 100 year old secret can now be enjoyed by you!
Limestone Springs Smoked Trout Marinade makes it easy for any of us to create and enjoy delicious smoked trout (or other fish if you must..). The recipe for our curing brine originated in the Pocono Mountains of Pennsylvania, where trout is always the fish of the day! After passing around from one smoked trout aficionado to another for nearly 100 years (like a guarded moonshine recipe!), our friends and premier trout smokers at Pocono Mountain Trout Company agreed to share the formula with us, and you.
Use a minimum 16 oz. of Limestone Spring Smoked Trout Marinade to cure up to 5 pounds of trout by soaking and refrigerating the trout in the marinade for about 24 hours. Discard excess liquid (marinade will have fish juices mixed in – do not reuse) and follow the directions (suggestions) for your smoker. You might also try smoking with your gas grill. Place a foil pack of damp woodchips (hickory is our favorite) over just one low heat burner and arrange the trout to indirectly heat on the other portions of the grill for about an hour. Warning, if you eat warm smoked trout, there might not be any left for your guests! (see below)
For a little extra variety, experiment with soaking times, smoking times, wood chips, or your own extras to the marinade like garlic, Cajun spices, seafood spices, bay leaf…

From the Limestone Springs Trout Hatchery and Fishing Preserve, near Richland in Lebanon County, PA, Aqua-Life, Inc.’s dedicated fish farmers carefully hatch, feed, clean, scrub, and generally keep a 2 year watchful eye as the rainbow trout grow from “two eyes and a wiggle” to the one pound trout selected for dining out. Each day is spent monitoring oxygen and water conditions (trout ventilation), incubating eggs and baby sitting the small fry, feeeeeeeeeding the fingerlings (they’re ALWAYS hungry), separating the bigger ones from each other (big fish eat little fish), harvesting orders for stocking or market, and keeping track of all the details including, “Exactly where are the 2 million trout?” In the concrete raceways of the farm, answering that question is actually not that hard, since all fish are tracked routinely for size and numbers as they grow.
